TORTILLAS
In a Large bowl Combine the Corn Flour, Salt
now take the 1 3/4 water and only add about half
mix it up with your hands, if its too dry add a little more water
make sure the consistency is close to wet sand
once the dough forms, shape it into a giant ball
now pull a golf ball size piece from the dough ball and make it round again
Prepping to use the Tortilla press I cut the sides of a freezewr ba. Ive had this bag for many years. you can wash it and re-use
using a tortilla pres with a plastic covering i lightly grease the surface. place the smaller masa dough ball in the middle and press it down. Not to firmly or the dough will stick to the press.
open the plastic the tortilla will be stuck to one side. place the tortilla in your hand and peel the plastic off like as sticker
now just heat up an iron skillet and cook each side for about 1 min each
ELOTE SEASONING - NightShade Free
add the following into a blender
1 Tbsp cumin
1 Tbsp nutritional yeast
1/2 Tsp Sugar
1 tbsp corn flour
1 tbsp driend cilantro
1 tsp black peper
1/4 tsp salt
1 tbsp vegan parmesian - The link to the recipe is in the description above
1 tsp liquid smoke
blend everything until fine
ELOTE CORN
using 2 cups of grilled corn in a bowl
add 2 tbs vegan mayonnaise
juice from one lime
1 tbsp nightshade free Elote Seasonng
VEGAN BURMESE TOFU CHICKEN FAJITAS
Combine in a bowl one loaf of the Burmese Tofu cubed (firm is best)
1 tbsp cumin
1 tbsp garlic pwder (or 3 garlic cloves pressed)
1/2 tsp salt
1 tbsp onion powder
mix everything so its evenly coated
using 2 tsp oil and a non-stick pan
cook for some crispy edges lettign the corn flour and seasonings absorb into the burmese. try not to toss them around too much. if they break down a little its ok.
TACOS
take three tortillas
add your vegan chicken fajita burmese tofu
add cooked black beans
add Elote Corn
add Fresh Clantro
using a wedge of lime squeeze the juice over all three
enjoy!!!
